Italian Soup with Sausage

This soup is easy to prepare and full of flavor. It contains Italian sausage, which is a good source of protein.


– 1/2 tablespoon of olive oil, – 2 un-cased links of Italian-style turkey sausage, – 1 small onion, diced, – 2 cloves of garlic, minced, – A pinch of red pepper flakes

– 1 can of diced tomatoes, – 8 cups of low-sodium chicken broth, – 3/4 cup of farfalle, preferably whole grain, or any other type of pasta,

– 2 cups of green beans, trimmed and halved (a few cups of baby spinach or diced broccoli can replace the green beans), – Parmesan cheese for serving.


1. Heat the olive oil in a large saucepan or pot over medium heat.

2. Add the sausage meat and cook for 3-5 minutes, until it is no longer pink. Transfer to a plate and set aside.

3. To the same pot add the onion, garlic, and red pepper flakes and cook for about 5 minutes, until the onion is soft.

1. Add the tomatoes and Serve it.
